IGP Pays d’Oc
Bright ruby colour with purple reflections. On the nose, aromas of red stone fruits (prune, cherry) followed by notes of vanilla. In the mouth, the attack is round and soft, becoming richer whilst remaining very round. The tannins are velvety ensuring good ageing capacity. The roundness of the body persists, backed up by an exceptional bouquet.
Soil :
Chalky-clayey soils with small round pebbles and some gravel.

100% Merlot
Vinification :
The grape ripens early in our district an dis harvested at the start of september or sometimes at the end of August. The fermentation is traditionally carried out at a constant temperature, with a long maceration process in order to extract the tannins. This garantees a good length on the palate.
Olding :
After fining, 30% of the cuvée is aged in oak barrels for 6 months then blended together.
Food and wine :
A perfect accompaniment to red meats, game and cheeses. Try it as well with grilled duck breast or coq au vin.
Advice :
For the best wine tasting, put in a decanter a little while before.
Serve at a temperature of about 18°C.
