IGP Coteaux de Narbonne
This wine is pale yellow with silver rim.
Nose complex and fruity, blend of citrus fruits (lemon , lime and grapefruit) and blackcurrant bud.
The typical sauvignon aroma stay during all of the time tasting with exotic fruits.
The entry in mouth is very fresh. This fruity wine is refreshing in mouth. The final is long by acidity.
Grape varieties :
Sauvignon Blanc 95 %, Chardonnay 5%.
Made by straight pressing. Then there is a sediment precipitation by cold temperature (10°C) during 24 h. Then only the clear juice is innoculated for the fermentation. That one during 18-21 days at low temperature, to protect the natural grapery aromas.
Food and wine :
deal with seashells and fish. Also nice with goat cheese, or just as an aperitif. To be tested with a seafood platter, or a grilled fish.
Serve chilled at 8-10°C.
